10-minute Vegetable loaded tacos

These tacos are my scrambled veggies tacos and they are delicious! This recipe makes 6 tacos (so serves 2, or me when I am super hungry!)

Veggie Loaded Tacos Anyone?

Ingredients⠀

  • 1 red bell pepper (diced)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/2 zucchini (diced)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 medium red onion (diced) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 cup corn⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp. taco seasoning ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tbsp. olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/2 cup red cabbage diced small⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/2 cup vegan cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1/2 cup refried beans (Try my Jalapeno Homemade Beans)⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 6 tortillas (you can find my favourite tortillas here). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • avocado or avocado crema

Directions

1. Combine all the pepper, zucchini, corn and onion in a bowl. Drizzle with olive oil and toss with taco seasoning! ⠀⠀⠀⠀
2. Bake veggies in the oven at 350F for 20 minutes, stirring once. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Warm the tortillas and refried beans. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. One each tortilla spread 1 scoop of beans, and top with veggies, cabbage and cheese. If I have it I like to add avocado cream! ⠀
