Protein Mug Cake

I Love Cake

But let’s be honest who doesn’t love cake?!?! Chocolate cake. Vanilla Cake. Marble Cake. Shortcake. Red Velvet. I love cupcakes and cake pops. I love all cake.

Unfortunately no matter how hard I tried having a couple slices of cake a day just did not fit in with my meal plan or my goals (SHOCKER right?!?!). So I started looking around for other options. I found so many options for protein mug cakes. So I took what I saw and made mine sparkle 😉

Ingredients

1 scoop whey protein (I use birthday cake or vanilla shake)

1 TBSP flour of choice (I use all purpose cake flour or gluten free all purpose)

1 TBSP brown sugar

1/2 tsp baking powder

1/2 tsp vanilla

1/4 cup Ripple Pea Milk Vanilla

1 Large Egg (you can use a vegan egg substitute!)

1 tbsp greek vanilla yogurt (optional)

All the sprinkles – seriously all the sprinkles of your choice.. make it a RAINBOW cake

Directions

Mix all ingredients in a container. Spray a bowl or cup with some non stick oil. Pour your batter (it will be a bit thick) into your cup of choice. Microwave for 1 minute.

Now because I am extra I like to top my cake with 2 spoons of non fat whip cream, because I am a queen and I have decided I deserve it and so do you!

Now I am not giving this my normal taste rating because lets be honest – its cake and we all know its a 10 🙂
