Lasagna Stuffed Spaghetti Squash

Have you ever had Spaghetti Squash? I LOVE LOVE LOVE it! Spaghetti Squash is healthy, low calories, delicious and you can make it so many ways. One of my favourite ways to make a spaghetti squash is with my  Lasagna Stuffed Spaghetti Squash with baked eggs.

I love this recipes for 2 reasons – one we all know I cannot live without eggs. I love them, I love the taste, the protein and how inexpensive they are. Two – I love my flexitarian lifestyle and all the vegetarian ways I am coming up with to eat high protein, plant based foods.

Lasagna-Stuffed Spaghetti Squash

Ingredients

  1. 2 small spaghetti squash (about 1 lb 10 oz each)
  2. 1 c. no-salt-added small-curd cottage cheese (or I use 1 cup Tofu Ricotta – VEGAN FRIENDLY)
  3. 1/4 c. grated cheese (you can use vegan cheese here too)
  4. Kosher salt and pepper
  5. 8 oz. frozen peas, defrosted
  6. 3/4 c. low-sodium marinara or tomato sauce
  7. 3 oz. part-skim mozzarella, grated (can also use vegan cheese)
  8. Green salad, for serving
  9. 4 Eggs for serving

DIRECTIONS

Using a large serrated knife, cut the spaghetti squash in half lengthwise. Use a spoon to scrape out and discard the seeds.

Place all 4 squash halves, cut side down, on a large piece of parchment paper in the microwave. Cook on high power until just tender, 9 to 11 minutes.

Meanwhile, heat broiler and lower the rack to the middle position of the oven. In a bowl, combine the cottage cheese, Romano and . tsp pepper; fold in the peas.

Season the squash halves with . tsp each salt and pepper, then use a fork to scrape up most of the squash strands, leaving them in the squash.

Now here is where I will crack an egg into each one but this step is optional – I find egg yolks love a flavour that I cannot get enough of but it is your choice! If you are using an egg I make a hole in the middle of the mixture, crack the egg and continue.  Divide the cheese mixture among the squash and top with the sauce, then the mozzarella.  Broil until the filling is heated through and the top is golden brown, 2 to 3 minutes. Serve with a green salad, if desired.
