
High Protein Lentil Salsa
As a vegetarian I am always looking for new ways to up my protein. Recently I was looking in my pantry and thought hmmm what can I make that’s quick and easy with lentils. Lentils are great protein and I had a ton!
The answer, Lentil Salsa!
quick, easy, tasty and higher protein than normal salsa. Let’s get right down to it.
Ingredients
1. 1 cup corn kernels
2 2 plum tomatoes
3. 1 pepper diced
4. 1 jalapeno diced
5. 1 can green lentils
6. 1 red onion diced
7. 1 garlic clove minced
8. 3 tbsp lime juice
9. sea salt to taste
10. 1 bunch of cilantro roughly chopped
Directions are simple :)
1. I toasted or charred the corn quickly in my pan with a but of extra garlic (because garlic is yummy)
2. I put everything in a bowl together and mixed.
