Have you heard about the incredible health benefits of turmeric?
Turmeric is one of my favourite spices to use in cooking, and this is a simple turmeric beans and rice bowl.
Before we get to the recipe lets chat about Turmeric – specifically Curcumin which is the most active health related compound in turmeric.
Turmeric (Curcumin) has been used in India for thousands of years as a spice and medicinal herb. Now science can back up the medicinal properties.
Curcumin is naturally anti inflammatory, and can help your body fight foreign invaders. It helps increase the antioxidant capacity of your body. Its been linked to lower risk of brain disease. It has been shown to help lower your risk of heart disease and some studies suggest it might even help prevent cancer.
Most of the medicinal benefits come from taking a turmeric supplement, but because it also an awesome spice you can only benefit from adding it to your diet!
One of my favourite ways to do this is to add turmeric to my rice!
Turmeric rice is flavourful and delicious.
So the next time you want to up your vegan rice game why not try Turmeric rice? This is my vegan version!
1 tablespoon vegan butter
1 tablespoon olive oil
1/4 cup onion finely diced
4 cloves garlic minced
1 cup basmati rice rinsed
1 and 1/2 cups vegetable low sodium
salt to taste
pepper to taste
1 and 1/2 teaspoon turmeric
- Rinse your rice so the water runs clear.
- In a large sauce pan, saute garlic in onion, in the melted butter and onion!
- Slowly add the turmeric and stir to make sure everything is coated.
- Add in vegetable broth, cover and bring to a boil. Once boiling reduce the heat to medium and allow to cook until all the broth is absorbed.
This time on my turmeric rice I had spiced beans, peppers and sweet potatoes! I often top with avocado or vegan sour cream for some coolness.
