Healthy-ish Pancakes ;)

I love pancakes. My dad is not a great chef, but if I had to pick a favourite thing that he used to make for us it would be PANCAKES… from scratch with all the love in the world.

My Dad.. The Pancake Man

Since I now live 3500 km away from my dad, I don’t often get his pancakes, but almost every weekend I try out a new pancake recipe to see how it compares ;). My most recent find and secret treasure, is a Yam Pancakes recipe. Sugar free (except for the large amounts of Maple syrup that go on top). I top mine with Skyr Plain Yogurt, chopped cinnamon nuts and maple syrup. If given the choice for breakfast Chuck also prefers pancakes to eggs so I am always looking to him to approve a recipe. He gives this one 5 pokeballs 😉

The best part about this pancake rating is the spoonie rating! You literally put all the ingredients in a blender and voila! done 😉 Let me know what you think <3

Ingredients

    • 1 medium sweet potato
    • 1 cup milk
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon vanilla extract 
    • 1 large egg 
    • 1 cup flour, whole wheat 
    • 2 teaspoon baking powder 
    • 1/4 teaspoon salt

Serve With

  • 2 medium banana
  • 1 cup yogurt, vanilla, low-fat
  • 4 tablespoon maple syrup, pure

Instructions

    • Cook sweet potato (this can be done the night before). You will need 1/2 cup mashed.
    • Blend first five ingredients in a blender, until smooth.
    • Whisk together the flour, baking powder and salt. Add the sweet potato mixture and stir just until combined.
    • Add more milk if needed for the consistency of pancake batter.
    • Pour the batter onto a hot griddle greased with nonstick cooking spray. Flip the pancakes when the begin to bubble and are golden brown on both sides
    • Serve warm topped with sliced bananas, yogurt, and a drizzle of maple syrup.

I found this recipe from #SuperHealthKids and I think its gonna be my new go to pancake recipe. <3 This summer I am going to try it out on my dad 😉
