
Healthy-ish Pancakes ;)
I love pancakes. My dad is not a great chef, but if I had to pick a favourite thing that he used to make for us it would be PANCAKES… from scratch with all the love in the world.

Since I now live 3500 km away from my dad, I don’t often get his pancakes, but almost every weekend I try out a new pancake recipe to see how it compares ;). My most recent find and secret treasure, is a Yam Pancakes recipe. Sugar free (except for the large amounts of Maple syrup that go on top). I top mine with Skyr Plain Yogurt, chopped cinnamon nuts and maple syrup. If given the choice for breakfast Chuck also prefers pancakes to eggs so I am always looking to him to approve a recipe. He gives this one 5 pokeballs 😉

Ingredients

- 1 medium sweet potato
- 1 cup milk
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extractÂ
- 1 large eggÂ
- 1 cup flour, whole wheatÂ
- 2 teaspoon baking powderÂ
- 1/4 teaspoon salt
Serve With
- 2 medium banana
- 1 cup yogurt, vanilla, low-fat
- 4 tablespoon maple syrup, pure

Cook sweet potato (this can be done the night before). You will need 1/2 cup mashed.

Blend first five ingredients in a blender, until smooth.

Whisk together the flour, baking powder and salt. Add the sweet potato mixture and stir just until combined.

Add more milk if needed for the consistency of pancake batter.

Pour the batter onto a hot griddle greased with nonstick cooking spray. Flip the pancakes when the begin to bubble and are golden brown on both sides

Serve warm topped with sliced bananas, yogurt, and a drizzle of maple syrup.
