Garlic Beet Hummus

Beet Hummus and Veggies! Is there anything more refreshing?

Crunchy Veggies, Smooth delicious hummus, and of course BEETS!

Beets are amazing! So bright, fresh and delicious. Not only do they taste amazing, they are so good for you.

Beet Hummus is so easy and simple!

Ingredients.

  • 1 small roasted beet
  • 15-oz. cooked chickpeas (I slow cook mine for 3 hours from raw!)
  • 1 large lemon (zested)
  • 1/2 large lemon (juiced)
  • 1 healthy pinch salt and black pepper
  • 2 large cloves garlic (minced)
  • 2 heaping Tbsp tahini1/4 – 1/3 cup extra virgin olive oil (a bit of extra oil makes it smooth, you can add more as needed).

Directions

Put everything in a blender and blend on high until smooth!

Serve cold with all your favourite veggies!
