These are my caramelized onion and halloumi tarts! I love Halloumi. For those of you who haven’t had Halloumi before it is an amazing cheese! It is amazing because it is semi solid and can be grilled without melting! Plus is always feels like a luxury cheese to me.
These tarts are so quick and easy to make for something special
- 6 Medium red onions, peeled and chopped
- 0.5 cups brown sugar
- 60 grams butter
- 50 ml balsamic vinegar
- 100 grams halloumi cheese – chopped. I got fancy and used garlic
- 8 mini pie tart shells – or homemade pastry
- salt to taste.
- pepper to taste
Caramelize the onions. Melt the butter in the pan, add onions, brown sugar, vinegar, salt and pepper. Simmer until the onions are light brown and sticky.
Put 1.5 tbsp of the onion mixture in each tartlet. Bake at 350 for 30 to 40 minutes or until bubbly.
Top with Halloumi cheese. Bake for an extra ten minutes!
