Easy High Protein Vegan Veggie Bowl!

I live in a winter wonderland! Now the exciting thing about that is that it is going to be a white Christmas! 🎄❄🎅🏻

But the bad thing about that is it is going to be COLD.

On cold days there is nothing like a warm hearty bowl. This is one of my favourites. I call it my quinoa beet nourish bowl!

Ingredients.

  1. Moroccan spiced tofu
  2. 1 large beet diced.
  3. 1 mini cucumber diced.
  4. 1/2 cup quinoa.
  5. Vegan Ceaser dressing.

Directions.

  1. For the beets, drizzle in garlic and oil and bake until soft.
  2. For the tofu, sauté until cooked through.
  3. For the quinoa. cover with 1 cup water, bring to a boil on high. Once boiling cover and reduce to medium heat. Once everything has evaporated, fluff the quinoa.
  4. Assemble your bowl and drizzle with dressing.

For me these bowls are amazing because as long as you have quinoa, tofu and a nice dressing you can add just about anything!
