Chorizo used to be a favourite of mine, I could always count on it for spice. So when I went vegan I knew I had to find a vegan replacement for it. One of the most versatile meat replacements I have ever found comes from WALNUTS.
Walnuts are amazing, they are packed to the brim with Omegas, filled with protein and healthy fats and can be relatively inexpensive – just buy in bulk and from Costco or superstore if you can!
I have made lots of vegan recipes with walnuts – you might remember my vegan wellington . I started using walnuts as a way to avoid mushrooms – though now I have learned to love even mushrooms
These are my Vegan Walnut Chorizo Style Tacos. High Protein. High Omegas. Fantastic Taste. What more could you want?
1 cup cauliflower ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup walnuts⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 garlic cloves. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 adobo peppers⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp. cumin ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp. chilli powder. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Toppings of your choice (I used pickled jalapenos, cabbage and fresh pineapple). ⠀⠀
- Toss cauliflower, walnuts, jalapeno, garlic, adobo peppers, cumin and chili powders (so basically EVERYTHING) into a blender and pulse. Don’t blend! We want to pulse the filling so that it gets a meaty texture.
- Pour out the filling into a baking dish and bake on 350F for 20 to 30 minutes until crunchy but not over done. I like to stir it every ten minutes.
- Top with your favourite toppings – I believe that pickled veggies really elevate the taco experience so I pickle my own radishes or jalapenos. You can follow along here to pickle your own veggies! Pickled cabbage and pickled onions are also fantastic!⠀
Now all there is left to do is enjoy!
