Beet Noodle Pasta

Have you ever tried vegetable noodles? I have tried zucchini noodles but I was bored and I wanted to mix it up. So this week I made spaghetti alfredo with BEET Noodles!.  Beets are low in calories and nutrient dense. This means that you can eat more “Pasta” and get more nutrients. Especially fire, folate and Vitamin C.

Beets have been shown to help lower blood pressure, improve athletic performance and fight inflammation. All in all I call it a win win.

Here is a recipe for beet pasta, I made this for just myself last night and it was delicious, (eggs are always optional) .


  1. 1/2 cup spaghetti.
  2. 1 cup spiralized beet noodles (i bought mine pre spiralized to make it easier)
  3. 1/4 cup alfredo sauce
  4. 1 clove chopped garlic
  5. 1/4 cup chopped onions
  6. 2 poached eggs

Cooking this meal is really simple – cook your pasta noodles as normal.

While the pasta cooks, saute garlic and onions in 1/2 tbsp of olive oil. Once they are translucent add in your cup of spiralized beet noodles. Saute for a few minutes (i only did mine for 2 because I like a bit of crunch to them :)). Add in the spaghetti noodles and sauce.

Beet Noodles and Spaghetti

While the noodles and sauce mix together, soft poach 2 eggs in a pot of water with a tbsp of vinegar.

*This time I also added some grilled Italian sausage as you can see. It is good vegetarian but spicy Italian sausage adds a kick!
